Cream of broccoli recipe of 28-10-2016 [Updated on 29-08-2018]
Velvety broccoli is a very tasty and easy to prepare first course, one winter soup creamy and nutritious and that is prepared in just over half an hour. When Ivano arrived at the office for lunch he was somewhat disappointed to see that there was a soup and not an "omelette" as he had understood on the phone. Once tried, however, he totally changed his mind and licked his mustache (which he doesn't have!), Certainly he would have preferred something more greedy, but sometimes a healthier dish, it doesn't hurt;)
Of this classic recipe, I also made a halloween-style version that will amaze your guests, I'll post it in a while, wait for me;)
How to make broccoli soup
Remove the broccoli stems, divide them into florets and wash them.
Sauté the chopped onion in the oil in a large pan.
Add the broccoli and brown for a few minutes.
After washing and dicing the potatoes, brown them too with the broccoli for a few minutes, stirring.
Now cover with the hot broth and cook for about 30 minutes.
At this point puree the vegetables with an immersion blender.
Add salt and Parmesan cheese and stir.
Serve your broccoli soup with a drizzle of raw extra virgin olive oil, parmesan flakes and croutons.
