There salmon and zucchini pasta is a first course with smoked salmon quick and easy to prepare. I've been confined to my mom's house with the flu since Friday so I haven't been able to experiment with any new recipes :( The only recipe I have to publish is this pasta with salmon and zucchini that I prepared on the fly for me and my husband the other night before I got the flu ... sob! The recipe for homemade salmon and zucchini is very simple to prepare and is a very delicate and fragrant first course, perfect for varying the classic farfalle with salmon.
For this preparation you can use both fresh and smoked salmon depending on whether you like the more or less strong taste of the fish :)

Procedure for preparing pasta with salmon and zucchini
Cut the salmon into strips; wash and trim the courgettes and cut them into strips.
Chop the shallot and brown it in a pan with the oil. Combine the courgettes with the shallot, add a ladle of water and leave to cook for about ten minutes.
Add the salmon cut into strips and mix gently, then season with salt and pepper.
Cook the pasta in abundant salted water, drain it al dente and toss in a pan with the salmon and courgette sauce.
Serve the casarecce with salmon and zucchini with a grated lemon zest on the plates that will enhance the flavor and aroma of your first course;)
