The montanare are the classic Neapolitan fried pizzas. Together with the (other) classic fried pizzas with ricotta, these montanare can be found in all the rotisseries of Naples :) Very easy to prepare and a good that leaves you speechless, they are a challenge that is often prepared in my house. The other night I did them for the first time and I my husband and we licked our mustaches: P

Method

How to make mountain pizzas

Prepare the pizza dough by placing warm water and yeast in the center of the fountain of flour.
Knead the dough and add the oil and salt. Work until the dough is smooth and homogeneous.
Let the dough rise for a couple of hours or until doubled.

Divide the dough into balls and put them to rise covered with a cloth for half an hour
Open the dough with your hands to form a round pizza

Prepare a sauce by cooking the tomato puree with a drizzle of oil and salt and cook for about 15 minutes.


Fry in hot oil.

Cook the montanare pizzas for a minute on each side, then lift them with a slotted spoon and place them on a plate lined with absorbent paper.
Then season them with the hot tomato sauce.

Immediately add the diced mozzarella and sprinkle with the Parmesan cheese so that it can melt in contact with the heat of the freshly fried pizzas.

As soon as the mozzarella has melted, add the basil and bring the montanare to the table and enjoy your meal: P
