These stringy potato balls are a kind of crocchè but cooked in the oven. They are good and light .. since I'm on a diet I have to combine good food with something not too heavy;)


How to make baked potato croquettes

Wash the potatoes, boil them, peel them and mash them with a potato masher in a bowl.
Add the Parmesan, eggs, salt, pepper and a grated nutmeg and mix everything together to form a nice firm dough.

Cut the Galbanino into cubes, form balls with the mixture and place a small cheese dice in the center of each ball.

Then pass the balls first in the flour, then in the egg white and finally in the breadcrumbs.
Arrange the balls on a baking sheet covered with parchment paper and bake for 30 minutes at 200 ° C.

Remove from the oven and serve still hot.
