Hot cross buns are spiced sweet buns of Anglo-Saxon origin, decorated with a cross on the top and traditionally prepared on Good Friday. The traditional method to obtain the cross on the top of the sandwiches is to use shortcrust pastry, however most of the recipes I found bring a dough consisting of a water glaze, a royal icing or in most part, a cream composed of flour and water ( which I replaced with maple syrup to make the sandwich more sugary). Although hot cross buns are linked to Easter celebrations, they are now consumed all year round, they have always intrigued me both for their goodness and for the folkloristic stories that surround them. For example, it is believed that hot cross buns can help the sick to recover their strength, which, when shared with a friend, guarantee their friendship for the whole year to come "Half for you and half for me, Between us two shall goodwill well ", that preparing and serving them on Good Friday will not mold for a whole year ... And even that, hung in the kitchen, they protect against fires and guarantee the success of future loaves. How to make hot cross buns

Put the sugar, flour and spices in a bowl and mix
Then add the yeast dissolved in 50 ml of milk taken from the total and start kneading
In a bowl, mix the remaining milk, melted butter and egg
Also add it to the dough
Soften the raisins in a bowl with hot water, then drain, dry and add the grated peel of an orange

Also add the raisins to the dough and continue to work until the raisins are evenly distributed in the dough

Form a ball, and leave to rise for 2 hours

Then divide the leavened dough into 16 pieces of equal weight

Shape into balls and place them on a baking sheet to rise for another hour.

Mix the flour with the maple syrup in a bowl until creamy

Then with the help of a syringe, create crosses on the surface of the hot cross buns

Place in the oven and bake at 180 degrees for 20 minutes

As soon as they come out of the oven, brush them still hot with the maple syrup

Let cool then serve your sandwiches
