There omelette with chickpea flour is a second dish that is delicious and at the same time very easy to prepare, to be eaten both hot and cold. It is the vegan variant of the classic one since, thanks to the use of chickpea flour, it is possible to make a tasty one omelette without eggs and without cheese.
Some time ago I had already successfully experimented with the farifrittata in the oven but the result of this omelette with chickpea flour without eggs pan cooked has been noticeably better, so it is now an integral part of my weekly menus.
To this base it is also possible to add grated vegetables directly into the dough, onions or zucchini for example, cooking times will remain unchanged.

Method

How to make an omelette with chickpea flour

Sift the chickpea flour into a bowl.
Add the water a little at a time and mix.

Once you have a smooth batter, add the oil and salt.
Then mix and let it rest for an hour.

Heat a drizzle of oil in a non-stick pan.
Pour the batter into it and cook for about 10 minutes, then turn it as if it were an omelette and cook it for another 5 minutes.

Your omelette with chickpea flour is ready to be served.
