Fried pizza with ricotta and salami

Ricotta and salami fried pizza recipe of 14-09-2007 [Updated on 05-04-2019]

The fried pizza is a variant of the classic Neapolitan pizza, in Neapolitan the fried pizzas are called "pizzelle". There are numerous variations for fried pizza, but the traditional ones are:
- the classic fried pizza sprinkled with ragù with fresh basil and a sprinkling of parmesan;
- fried pizza stuffed with ricotta, mozzarella, diced salami, parmesan and pepper;
- endive pizza with escarole, black olives from Gaeta, capers and anchovies.
Let's start with the fried pizzas stuffed with ricotta and salami, those who have never tasted them cannot understand what is missing :)

Method

How to make fried ricotta and salami pizza

Prepare the dough for the pizza Mix the flour with the water dissolved in the yeast until a soft and homogeneous dough is obtained. Form the dough into a ball and leave to rise in a warm place for 3 hours.

Prepare the stuffing by putting the ricotta, mozzarella and salami cut into cubes, Parmesan, salt and pepper in a bowl

After rising, divide the pizza dough into many balls.

Roll them out with a rolling pin or by hand in order to make many pizzas (or pizzelle)
Spread a few tablespoons of stuffing over half of the pizza disc.

Close the pizzas in the shape of a calzone and seal the edges well with your fingers.

Then let it rise again for half an hour.

Fry the pizzas now. Put the peanut oil in a saucepan with a high edge and when the oil becomes hot fry the pizzas one or at most 2 at a time.

Fry for a couple of minutes on each side.

Lift with a slotted spoon and place them on absorbent paper.

Bring immediately to the hot table.
