How do we make this pudding?

Very simple: We start by boiling water for spaghetti. We put in a pot about 3 l of water and when it boils we put the spaghetti that we break in two or three. Let them boil as much as specified on the bag in the preparation method.

When they are cooked, we put them in a large strainer and put them under a stream of cold water. Let them drain very well and put them in a large bowl.

Over them we add grated cheese, sugar, vanilla sugar, essence and the 5 beaten eggs. Mix very well so that the mixture is homogeneous.

When finished, pour the composition into the tray lined with baking paper. Spread the butter well at room temperature and the 2 beaten eggs on top.

Put the tray in the preheated oven at 160 degrees Celsius and let the spaghetti get a nice color and start to brown.

The pudding can be served hot or cold. You can powder it with vanilla powder if you like it sweeter and more flavorful. They are good anyway, we adore them.

24.04.2010 - is the date when this pudding was made. It's an older recipe, from the missing blog and because I love sweet cheese pudding, I said I have to refill it. First of all, there is no cheese "like at home", that's why this recipe is special for me and reminds me of my native Romania.
The recipe is taken from his blog Gourmandine, blog where I found many authentic Romanian recipes. I thank the distinguished lady for using me as a source of inspiration.

INGREDIENT: 400 g paste
600 g sweet cottage cheese
15 tablespoons caster sugar
3 eggs
rum to taste
150 g raisins
3 sachets of vanilla sugar
3 tablespoons gray
3 tablespoons sour cream
grated peel of a lemon
butter for greased tray

Put water in a pot, add a pinch of salt and bring to the boil. When it starts to boil, add the pasta and let it boil for 10 minutes. After boiling, put the pasta in a strainer.

In a large bowl we put the cottage cheese, vanilla sugar, sugar, semolina, eggs, sour cream, a pinch of salt, grated lemon peel and raisins soaked with the rum in which they stayed.
Stir until smooth and when we have obtained a homogeneous composition,

add the cooked and drained pasta. Stir to incorporate these as well.
Grease a glass bowl or a tray with butter and pour the composition into it.

Level the surface nicely and put the pudding in the oven until lightly browned.
Remove the pudding from the oven and we can serve it hot or cold, plain or with jam, syrup or fruit.

I didn't use it by chance macaroni to make this pudding. The pasta of my childhood was macaroni. We also eat them in salty or simple pudding, only with walnuts and sugar and sometimes with grated telemea and sugar. Sounds weird, doesn't it? I assure you they are very good.

400 g Pasta Baneasa pasta

1 tablespoon rom / 1 teaspoon esenta rom

1 teaspoon grated orange peel powder

750 g cream cheese

I prepared all the ingredients at hand, so that the preparation would not take long, and I would have ready the sweet macaroni pudding with cheese, toafide and walnuts until my son comes from school.

For starters I put the raisins in a bowl, poured rum over them, then hot / hot milk. I chopped the walnuts into small pieces.

I boiled the water. When it started to boil I added salt and mixed a little. I put the Pasta Baneasa macaroni in the water and I boiled them for 8 minutes, exactly as the package says.

During this time I mixed the eggs with the caster sugar and the vanilla sugar, until they became creamy and doubled in volume.

You can put only 100 g of caster sugar and taste it after you put the cottage cheese to see if it is sweet enough. If you like sweet, add more, but you may not need more sugar.

I added the cottage cheese and mixed until the composition was homogenous. The brand of sugar I use is less sweet, so I put another 20 g of sugar and mixed it.

In the cream cheese obtained I incorporated the drained raisins, chopped walnuts and orange peel powder (or grated orange peel).

In the meantime, the macaroni was boiled, so I drained it.

I put the macaroni back in the pot in which I boiled it because it is big and it gives me the possibility to mix them easily, without breaking them, with sweet and flavorful cream cheese.

I greased a heat-resistant form with butter and breadcrumbs, then I put the macaroni in it. I baked sweet macaroni pudding with cheese, raisins and walnuts for 30 minutes in the preheated oven at 180 ° C.

When the macaroni pudding was baked and browned a little on the surface, I took it out of the oven and let it cool a little before cutting it.

300 g spaghetti
300 g grated salted cheese
150 g sugar

4 eggs + 2 eggs
50 g sour cream

Boil water with a little salt and a drop of oil, then when it boils add the spaghetti broken in half. Boil well, drain and put in a bowl. Add grated cheese, sugar, vanilla essence, grated lemon peel and 4 eggs. Mix well. Grease a pan with butter, line with flour, then add the pasta mixture with cheese. Separately, beat the other 2 eggs with sour cream and spread the pudding on top. Bake until golden brown. When serving, it can be decorated with fruit or powdered with vanilla sugar, cinnamon or cocoa, according to preferences.

  • 200 g wide noodles (can also be macaroni)
  • 600 g of well-squeezed sweet and sour cheese
  • 2 yolks
  • 2 whole eggs
  • 250 g cream with 25% fat
  • Grated peel of a lemon
  • 150-200 g sugar
  • 100 g raisins
  • 1 tablespoon vanilla extract or 2 sachets of vanilla sugar
  • 15 g butter
  • 30 g breadcrumbs
  • Vanilla sauce for serving
  • Optional powdered sugar for top

Method of preparation:

Preheat the oven to 180 degrees Celsius.

Wallpaper an oven tray with baking paper measuring 28/20 cm.

In a large saucepan put 2 liters of iron water with a tablespoon of salt and boil the noodles according to the instructions on the package. We drain them and set them aside.

In a bowl put the cheese, raisins, sugar, vanilla extract, raisin cream, lemon peel and mix.

Add the noodles over the cheese composition and mix.

Pour the composition into the tray lined with baking paper and bake in a covered oven for 35-40 minutes.
