It’s cookie season and people all around the world are baking, cutting, sprinkling, wrapping, and giving out all kinds of different cookies. To celebrate this festive time of the year and to bring you some new inspiration, we’re sharing 12 cookie recipes with you, one every day from now until Christmas Eve. These aren’t just any old cookie recipes, either — they’re recipes from cookie and history-enthusiast Anna Ginsberg and her cookbook The Daily Cookie, which is filled with 365 cookie recipes that honor and celebrate notable events throughout history. Along with giving you something new to bake in the kitchen, these 12 days of cookies give you a chance to win a copy of the book every day we share a recipe, so you’ll be able to enjoy a cookie recipe every day of the year, not just right before Christmas.

Today’s cookie is a Ten-at-a-Time cookie, in honor of today, Dec. 15, being Bill of Rights Day. These cookies are a way for you to teach yourself some history — as Ginsberg suggests memorizing the 10 amendments on the Bill of Rights and treating yourself to a cookie every time you get one right. These tiny little bite-sized morsels are loaded with chocolate and other decadent ingredients like heavy cream, and they're so good you may eat more than 10 in one sitting.

Snow Day Cookies

It is so good to be back! We are settling into our new home after moving over the long Thanksgiving weekend. The holiday was sort of a non-event due to all the chaos, so I'm even more excited about Christmas, especially baking cookies in my new kitchen!

The first recipe I'm sharing is from Taste of Home, Snow Day Cookies. I'm not sure who is more excited to get that phone call in the morning calling for a snow day, my son or myself. :) This is the perfect "everything but the kitchen sink" cookie that will make a snowy day complete.

I was skeptical when I saw the chips and pretzels, but they give a nice salty element to balance all the sweet ingredients. I made zero changes to the recipe, but I will make one next time- double the batch. These disappeared really fast! Thanks to Brittney M from GA for sharing the recipe!

Snow Day Cookies

Ingredients:

  • 1 cup butter, softened
  • 1 1/4 cups brown sugar, packed
  • 2 eggs, large
  • 1 tablespoon vanilla extract
  • 2 teaspoons 2 % milk, I used whole
  • 2 cups old fashioned oats
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups coarsely crushed potato chips
  • 1 1/2 cups coarsely crushed pretzels
  • 1 cup semi sweet chocolate chips
  • 3/4 cup milk chocolate M&Ms

Instructions:

  1. Preheat oven to 350°.
  2. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs, vanilla and milk.
  3. In another bowl, whisk oats, flour, baking soda and salt gradually beat into creamed mixture. Stir in potato chips, pretzels, chocolate chips and M&M's.
  4. Drop dough by scant 1/4 cupfuls 2 in. apart onto ungreased baking sheets flatten slightly.
  5. Bake 14-16 minutes or until edges are golden brown (centers will be light). Cool on pans 2 minutes. Remove to wire racks to cool.

Day 5: Cherry Almond Drop Cookies

Ok, I have to level with you. There is nothing particularly Christmas-y about these Cherry Almond Drop Cookies. Other than the fact that I make them every year for Christmas. I absolutely adore them. They have a rich almond flavor reminiscent of my Godmother’s amaretti cookies. They’re crisp on the outside, and chewy on the inside. And the dried cherries and cute little garnet specs that slightly sweet, slight tart bite to them.

I suppose you could make them any time of year, but I really like adding these to my Christmas Cookie Platter. They aren’t overly sweet and have a great flavor, and are a nice alternative for people who don’t like frosted or glazed cookies. Plus they make great gifts, who would love to receive a box of these?


12 Days of Christmas: Sugar Cookie Squares


I love Christmas cut-out cookies (I’ll be posting a recipe for those later this month!) but sometimes they are just so… much… work. Make the dough, chill the dough, roll the dough, cut the dough, bake the dough, frost the cookie, decorate the cookie, PHEW! If you want an easy shortcut that still maintains the flavor and concept of a frosted cookie, give these a try.

Sugar Cookie Squares

3/4 cup sugar
2/3 cup butter, softened
1 Tablespoon milk
1 teaspoon vanilla
1 egg
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt

Frosting:
4 cups powdered sugar
1/2 cup butter, softened
1 teaspoon almond extract
3 to 4 Tablespoons milk

1. Preheat oven to 375F. Combine sugar, 2/3 cup butter, milk, vanilla, and egg in large bowl. Beat at medium speed until creamy Reduce speed to low add flour, baking powder, and salt mix well.
2. Spread mixture into ungreased 15x10x1-inch jelly-roll pan. Bake for 10-12 minutes or until set cool completely.
3. Combine powdered sugar, 1/2 cup butter, and almond extract in medium bowl. Beat at medium speed, gradually adding enough milk for desired spreading consistency. Spread frosting over cooled bars decorate with sprinkles [optional], cut into squares.
