Fried zucchini

Peel a squash, grate it and slice it about a centimeter.

Sprinkle with salt and leave for 15-20 minutes.

Beat eggs with salt and pepper.

Put the flour in a plate.

In another plate, mix breadcrumbs with crushed cornflakes and a little paprika for color.

Wipe the zucchini slices with water, pass through flour, egg, breadcrumbs and fry in hot oil.

Fry on both sides until nicely browned.

Remove on paper towels.

They are good warm and cold.
